JAN'S WELSH CAKES

This is my Sis-In-law's recipe for delicious Welsh Cakes

WELSH CAKES

Ingredients:
1lb Self-Raising Flour 8oz Margarine 6oz Sugar 3oz Currants or Sultanas 2 Eggs A Little Milk Pinch of Salt

Method:
Sieve FLOUR and SALT into a mixing bowl. Cut up MARGARINE and rub in with the fingertips until the mixture resembles fine breadcrumbs. Add SUGAR and FRUIT and stir in BEATEN EGGS. Mix to a stiff dough. Add a Drop of MILK if necessary.
Place on a floured surface, knead lightly and roll out to ¼ inch thickness. Cut with a fluted 2 inch pastry cutter.
Cook on a pre-heated, lightly greased planc (griddle) over a slow heat until golden brown on both sides. Cool on a wire rack. Serve Fresh.

Thank You Pat for breaking the tragic news about Elli Norkett.

It is with great sadness that I confirm Pat's report that one of our Wales Women Rugby Union International Players was kiIled in a car crash on Saturday last (February 25)

20 year old ELLI NORKETT, from Neath, was involved in a two car collision between Banwen and Glynneath.

The Wales winger, who had won four caps by the age of 17, was the only person to die in the two-car collision.


Elli was also proud to represent her country at SEVENS.
At club level she had played for SWANSEA LADIES and THE OSPREYS.
She was most recently playing for her Uni - Cardiff Met University
